❄️ Winter Special Homemade Pickle: Gajar Mooli Achar
Enjoy the chilly winter vibes with this spicy, tangy, and super flavorful Gajar Mooli Achar. Perfect with parathas, dal-rice, or just a bite as-is! Made with seasonal carrots and radish, this North Indian classic is a must-have on your winter menu.
📝 Ingredients
- Gajar (Carrot) – 500 gm
- Mooli (Radish) – 500 gm
- Adrak (Ginger) – 50 gm
- Lal Mirch Powder – 2 tbsp
- Haldi (Turmeric) – 1 tbsp
- Rai (Mustard Seeds) – 2 tbsp
- Methi Dana (Fenugreek Seeds) – 1 tbsp
- Mustard Oil – 250 ml
- Salt – as per taste
- Vinegar – 2 tbsp
🍳 Method / विधि
- Clean and dry all vegetables properly. Slice the carrots and radish into thin sticks.
- Let them sun-dry for 4–5 hours (or overnight) to remove excess moisture.
- Lightly roast and grind mustard seeds and fenugreek seeds.
- Heat mustard oil until it reaches smoking point, let it cool slightly.
- In a bowl, mix veggies with spices, salt, vinegar, and cooled mustard oil.
- Store in a sterilized jar. Let it marinate for 2–3 days for best flavor.
- Serve with meals and enjoy the winter warmth!
💡 Tips:
- Always use dry spoons to avoid spoilage.
- Keep the achar jar in sunlight for better shelf life.
- Adjust salt and oil to your taste.
